Horchata is a refreshing summer cooler made with rice and almonds. I\’ve seen recipes with milk, but non-dairy is the traditional way – and if you\’ve seen it in a taqueria…it does sit out on a counter (almonds can do that – milk not so much). This particular recipe is adapted from Rick Bayless\’ Authentic Mexican cookbook. I use a little less sugar than he does because I like my horchata a little less sweet.
